Potato Salad
Grandma Sandy's Potato Salad
Ingredients
5 pounds of Russet or Golden Potato
1/2 pound Chopped Bacon
1 Medium Finely Chopped Onion
2 Tablespoons Flour
1-1/2 Cup Applie Cider Vinegar
1-1/4 Cup Sugar
1/2 Cup Water
1 Tablespoon Salt
6 Hardboiled Eggs (4 in the salad and 2 for decoration on the top)

Directions
Bring a large pot of water to a boil. Boil the potatoes and eggs until potatoes are fork tender. Blanch the potato and eggs when cooked in a large bowl with ice water.
Brown the bacon in the skillet. Remove the bacon and reserve the fat.
Cook onion in the skillet until tender and slightly browned.
Add 2 Tablespoons of flour, coat everything, and remove from heat.
Add 1-1/2 cups of apple cider vinegar, 1-1/4 cup of sugar, 1/2 cup of water, and 1 Tablespoon of salt and stir together.
